Artsy Education

So this Memorial day weekend Hubs and I met his parents and sister's family at a state park. (Artsy education state park ;-)) We had a lot of fun with them especially crossing the road between the two campsites with our precious niece. We went for a couple nature walks, had many a fire, rain, sunshine, mosquitoes, wood ticks and deer ticks. Also, it was a rustic park. Hello vault toilets. I packed some Charmin To Go just in case. Thankfully didn't really need it, but I was still glad I was prepared.

Here I am with Niecer. We were both kind of goofy lookin. This was before Hubs discovered that the auto light selection on our camera phones doesn't pick the best lighting. The one with him and niecer is much better.

I was actually hoping to post some nature pictures that I took. "How neat is that?" However, at a work meeting that I had the following Tuesday, I dropped my phone. Big surprise. I tend to do that a lot. My micro SD card was not tucked nicely behind the battery like my previous phone. It has easy access to fall out and be lost forever on the Lutheran Brethren parking lot. So that stinks.

This picture does not though. I just love it. So Hubs got me some HUGE marshmallows for my graduation. We brought them and they were really fun to roast. I did feel like I had my fill of sugary substance after one gooey mess, but it was delicious and very fun. We had a lot of great food while camping. Must have been some good menu planners out there.

Niecer is holding a Barbie doll that her mommy used to play with. Barbie was also 'baby'. I think it is pretty neat that she got to play with one of her mommy's old Barbies. I used to play with Barbies a lot. I don't remember getting into dollies much, but Barbies were where it was at for me. I am not saying that I really support Barbie or her image or anything like that, it was just a pleasant memory from my childhood.

I digress. Hubs and the FIL set up our tarp onto some trees to help us enjoy the campfire when it was rainy. SIL and BIL G brought a screened in canopy to help with rain as well. So we were able to enjoy the out of doors much more than if we just had umbrellas or tents.

A huge praise that happened was that I only had one tick on me and it was just on my shirt during our neature walk. Many a tick were killed by the knife that weekend. BIL G took care of our tick 'squashing'.

It was a good weekend.


This last weekend was great too. Hubs and I went on a couple walks to get some Vitamin D while it was beautiful out. We were surprised yesterday that it was so hot. We got some very berry TCBY and White Chocolate Mousse yummy. I also made chicken noodle soup for lunch. Yummy. And we had homemade pizza again. This time it was buffalo chicken. I cut off some of the dough and made a mini loaf of bread. I was really pleased.

Buffalo chicken Pizza:

1 loaf Rhodes Italian dough
1 chicken breast
Ranch dressing
Buffalo Sauce (I used medium wing sauce from BWW's)
Mozzarella Cheese
Celery(opt. but surprisingly delicious)
I cut the chicken into small bite size pieces, seasoned the chicken and cooked it with butter then coated it all in wing sauce. After spreading the dough out on a pizza stone I pre-baked it (following directions) Then use ranch dressing as pizza sauce. I used it pretty thinly. Drizzle Buffalo sauce. Sprinkle cheese. Sprinkle chicken and celery. I used some more moz. Then drizzled more buffalo sauce. Bake until done. (10 minutes or so).

Also I baked the mini loaf in a mini loaf pan for about 13 minutes. It was a nice compliment to the pizza. I love fresh bread. (Soul food).
